Key Responsibilities
As an F&B Controls Executive at Novotel Mumbai Juhu Beach, you will:
- Financial Management & Reporting
- Ensure all stock movements are documented and reconciled.
- Prepare and issue cost reports for management review.
- Analyze variances in costs and prepare detailed reports on sales, wastage, and consumption.
- Conduct buffet costing, minibar consumption tracking, and daily/monthly F&B reconciliation.
- Operational Oversight
- Supervise receiving, storekeeping, and inventory management processes.
- Verify duty meals, entertainment checks, voids, and audit reports in line with hotel procedures.
- Monitor liquor inventory, conduct surprise audits, and ensure recipes are updated in the system.
- Oversee inter-departmental transfers and coordinate with chefs for cost control.
- Compliance & Administration
- Maintain excise records as per local law.
- Ensure all policies related to F&B cost control are followed by departments.
- Provide insights on slow-moving items, shrinkage, breakages, and cost variances.
- Maintain strong relationships with internal teams and external suppliers for smooth operations.
Required Skills & Qualifications
- Bachelor’s degree/diploma in Finance, Accounting, or Hospitality Management.
- 2–5 years of experience in F&B cost control, finance, or hotel industry roles.
- Strong knowledge of inventory control, reconciliation, and cost variance analysis.
- Excellent numerical, analytical, and problem-solving skills.
- Ability to work under pressure while maintaining accuracy.
- Strong interpersonal and communication skills for working with cross-functional teams.
- Knowledge of excise laws and compliance processes (preferred).
